A personal portrait of Culinary Specialist Thomas M. Miller — the chef who almost wasn't. The eating disorder began beneath the surface, during undersea nuclear deterrent patrols and the Global War on Terrorism aboard USS Dallas SSN-700.

The Reluctant Chef. Thomas M. Miller did not set out to be a chef. He set out to serve. The eating disorder did not come before the Navy. It was born there — in the sealed, pressurized world of a fast-attack submarine running undersea nuclear deterrent patrols in the years following September 11th. Aboard USS Dallas SSN-700, during the Global War on Terrorism, the rhythms of life were unlike anything on the surface: no daylight, no natural schedule, no separation between the galley and the mission. You ate when the watch rotation allowed. You fed a crew of over a hundred men in a space the size of a hallway. The pressure — literal and otherwise — was constant. For Thomas M. Miller, CS1(SS), Leading Petty Officer of the Food Service Division, the relationship with food became complicated in that environment. The disorder took root quietly, the way things do when there is no room to acknowledge them. It would follow him off the boat and into the years that came after. The kitchen, eventually, became the place where he worked it out. Not a cure — there is no clean resolution to tell here — but a discipline. The structure of professional cooking gave the disorder a container: the mise en place, the portion control that was now a craft rather than a compulsion, the act of feeding people who depended on you and watching them be nourished.
