Where the Kitchen Meets the Land
BigSkyChef is built on one idea: that the best cooking happens when you know where your food comes from, respect the land it came from, and have the craft to do it justice.

First in Harm's Way — USS Dallas SSN-700
Thomas M. Miller — CS1(SS), Culinary Specialist First Class, United States Navy — served as Leading Petty Officer of the Food Service Division aboard USS Dallas (SSN-700) from May 2007 to June 2008. The Dallas is one of the most famous submarines the undersea Navy has ever known — the boat that inspired The Hunt for Red October. Thomas was responsible for all facets of food service operations aboard her, personally mentoring five Culinary Specialists and numerous Food Service Attendants across every aspect of the job.
He managed the ship's culinary perpetual inventory of over $120,000 USD — procuring, inspecting, receiving, and properly stowing all food service supplies and provisions across multiple regions throughout the world as Dallas deployed for over 270 days away from homeport in direct support of the Global War on Terrorism. He earned his 10-Week Dry Dock Shelter Certification and was recognized for inspirational leadership as the Ship's Spiritual Lay Leader. His performance earned him the Navy and Marine Corps Achievement Medal — Gold Star in lieu of a fourth award — awarded June 19, 2008 by Commander David A. Roberts, United States Navy.
"If I had to declare the coolest experience in my culinary career thus far, it would have to be my time with Dallas. I was able to train my cooks on a billion-dollar submarine, which happens to be one of the most famous boats the undersea Navy has ever known, then take them around the world with me." — Thomas M. Miller, BigSkyChef, Cash Cow Podcast, Bozeman MT, 2022
The Land Is the Recipe
Source First
Every dish starts with the question: where did this come from? Local ranchers, small farms, wild harvest — the sourcing is the foundation of everything.
Craft Without Pretension
Military-grade food service discipline applied to Montana cooking. Technique in service of flavor, not the other way around. Trained to feed crews on billion-dollar submarines — and bring that same precision to the Big Sky table.
Honest Cooking
No shortcuts. No substitutions that compromise the dish. The same uncompromising standard that kept a submarine crew fed and mission-ready across 270+ days at sea, now applied to every plate in Montana.
The Table as Community
Food is how people gather. From the galley of USS Dallas to Montana harvest tables — the campfire, the kitchen counter — these are the places where the real conversations happen.
