The kitchen as classroom. For many culinary professionals, the relationship with food is complicated long before the first knife cut. Eating disorders do not disappear when you put on a chef's coat. In some cases, the professional kitchen makes them worse — the culture of restriction, the long hours without eating, the constant proximity to food that cannot be touched. But for Thomas M. Miller, the kitchen eventually became something else: a place of reckoning, and then of repair. The structure of professional cooking — the schedules, the portions, the act of feeding others — created a framework for understanding what the disorder had taken and what recovery might look like.
