Helena, Montana sits at the edge of the Rockies, where the rivers run cold and clear and the trout are fat and wild. This is where I come to remember why I cook.

No restaurant can replicate this. The cast iron pan over an open fire, the trout pulled from the water an hour ago, lemon and rosemary from the camp kit, the last light of the day turning the lake into hammered gold. This is 'My Friend Helena' — Montana's finest supper club, with no dress code, no reservation, and no menu except what the river gives you.

American culinary tradition runs deepest not in the white-tablecloth restaurants but out here, where the cooking is honest and the ingredients are alive. This is the meal I come back to when I need to remember what food is actually for.
